The analysis of a sample of the lot by an accredited laboratory, with a report that gives the methods and the results. For honey, it covers the criteria of Directive 2001/110/EC (as a general rule: moisture at most 20%, HMF at most 40 mg/kg, diastase number at least 8, with exceptions by type of honey) and residues. For dried fruit, it covers mycotoxins, aflatoxins and ochratoxin A, and sulphites.
